   Fill the bag halfway

   Spoon frosting into the turquoise bag until it is half full, then twist the top closed. Chill frosting from a stainless steel bowls batch briefly if it feels soft.

   Pick the tip by number

   Drop the tip into the coupler. Star tips give a classic swirl, petal tips make ruffled edges and round tips work for dots and borders. Check the stamped number on the base to be sure.

   Pipe from the outside in

   Hold the bag upright and squeeze with steady pressure. Start at the outer edge of the cupcake and work toward the centre for an even top.
