Fill, freeze, pop out a hamster

   Fill the cavities

   Set the tray on a flat baking sheet or board. Spoon mousse or cake batter into both cavities with a soft spatula, then tap the tray to release trapped air from the ears.

   Freeze until firm

   Freeze until the filling is fully set. Soft mousse slumps and loses the ear and paw detail, so do not rush this step.

   Flex and release

   Flex the tray gently and lift the hamster out one cavity at a time. Plate it, then add a small topper if you want the finished look.
